Gruyere Cheese Tartlets

Amount Measure Ingredient -- Preparation Method

4 pastry shells
3 tablespoons butter
2 cups onion -- chopped
2 oz processed Gruyere cheese -- sliced
1 egg
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon pepper

Bake pastry shells in 450° oven for 7 minutes. Melt butter in large
skillet over low heat. Add onions, saute until tender and transparent.
Arrange layer of onions in bottom of each pastry shell, cover with
sliced cheese. Top with another layer of onions. Combine egg, cream,
salt and pepper, beat thoroughly. Pour equal amounts of egg mixture
into each shell. Bake in 425° oven for about 15 minutes or until
golden brown on tops. Garnish with fried onion rings and watercress.

NOTES : Tootie Notes:With this recipe was a recipe for the pastry
shells. I tried it and it was wonderful...but I have served this with
frozen pastry shells from the grocery store..I COULD tell the
difference but no one else seemed the least bit unhappy with the
taste. Will post the Pastry Shell recipe at a later time.
