Roasted Garlic Mashed Potatoes

Amount Measure Ingredient -- Preparation Method

1 head garlic -- peeled
2 pounds red potatoes -- cleaned & quartered
1/2 cup milk
2 ounces butter
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 cup Parmesan cheese

Heat oven to 350 degrees,coat garlic with a tablespoon of olive oil,place on
cookie sheet. Roast 20-30 minutes till well browned and soft. Boil potatoes
until tender,about 15 minutes,drain and place in mixer bowl, add remaining
ingredients and mix till mashed and combined. Adjust seasoning.
