Raw Potato Pancakes

2 ea large potato
3 ea egg yolk
1/2 t salt
1 t sugar
2 t flour
1/2 t baking powder
3 ea egg white

scrub potatoes well
grate into a bowl, without peeling
beat yolks until light and lemon colored
add the potatoes, salt, sugar, flour, and baking powder-mix well
beat whites to stiff peaks
gently fold into potato mixture
drop by spoonsful onto a greased griddle or skillet, to make 3-inch cakes
fry until well browned on both sides
keep warm in a 300 degree oven
serve hot
