 1 1/4  Lb            Carrots -- Peel, Cut In
 -- Diagonal Slices
 1      Tsp           Orange Peel -- Freshly Grated
 1/4  C             Fresh Orange Juice
 2      Tsp           Margarine -- *Note
 2      Tsp           Honey
 1      Tsp           Grated Ginger root
 1/4  Tsp           Salt
 
 *NOTE:  The original recipe called for butter or margarine.   I used a lower
 fat margarine.
 
 Place carrots in a large skillet, cover with water and bring to a boil.
 Reduce heat, cover and simmer until crisp-tender, about 3 minutes.  Pour off
 water leaving carrots in pan.
 
 Add remaining ingredients and stir over medium-heat until carrots are
 glazed, 1 to 2 minutes.
 
 These were *really* good.
