K-K-Krispy Pizza Crust

2 teaspoons yeast
1 teaspoon sugar
1/2 cup water -- lukewarm
1/2 teaspoon salt
1 cup flour
1 teaspoon cornmeal

This recipe for traditional crust takes some time. You have to let the
dough go through 2 risings. Using the "knead only" cycle, this recipe
works very well in a Bread Machine.

In a medium bowl, dissolve the yeast & sugar in the water; mix in the
salt & flour. Knead in more flour until the dough is tacky, but no
longer sticks to your hands (3 to 5 minutes). Cover & let rise in a warm
place for 30 minutes.

Preheat oven to 425F.

On a floured work surface, punch down the dough & roll out with a
floured rolling pin until it's large enough to cover your pizza pan.

Sprinkle the cornmeal over your pizza pan, place the dough in the pan.
Top with fat free mozzarella cheese, pizza sauce & lots of vegetables.
Remember: most vegetables are fat free, so pile them on.

Bake for 20 to 25 minutes, until crust is starting to brown a little
underneath.

Bread Machine option:

Place the yeast in one corner of the machines mixing bowl. Add flour,
salt, sugar & water. Set machine to "manual" or "knead only." Push
start. When the dough is ready, roll out. Sprinkle pan with cornmeal,
place the dough on the pan , top & bake as above.

NOTES : Pizza can be a fat free meal. However, frozen pizza &restaurant
pizza can contain up to 15 grams of fat per slice. The problem is mostly
in the cheese & toppings. Try the following great tasting, guilt free
toppings, with or without fat free cheese. (If you place the fat free
cheese under the sauce & other toppings, it will actually melt & not
turn into dried leather.)
Guiltless toppings:
onions, bell peppers (red, yellow or green) jalapeno peppers, banana
peppers, mushrooms, non-marinated artichoke hearts, imitation bacon
bits, broccoli, spinach & pineapple.
