1 yellow pepper -- in thin strips
1 carrot -- in thin strips
Salt and freshly ground pepper
4 ounces snow peas -- trimmed
3 tablespoons fresh lemon juice
2 tablespoons clam juice or chicken broth
1 tablespoon soy sauce
1 1/2 teaspoons cornstarch
1 tablespoon vegetable oil
1 teaspoon minced garlic
1/2 teaspoon grated fresh ginger
1 pound sea scallops
2 green onions -- cut into thin
strips
1 tablespoon toasted sesame seeds
Steamed rice (optional)

Combine yellow pepper and carrot in 10-inch microwaveproof pie plate;
sprinkle with water and a pinch each of salt and pepper. Cover and
microwave on High 1 1/2 minutes. Stir in snow peas. Microwave, covered,
30 seconds more. Let stand, covered, 2 minutes.
Meanwhile, whisk lemon juice, clam juice, soy sauce, cornstarch and a
pinch ground pepper in bowl. Combine oil, garlic and ginger in 1-quart
microwaveproof casserole. Cover and microwave on High 1 minute. Stir in
lemon mixture and microwave, covered, 1 minute. Carefully remove cover
and stir in scallops. Microwave, uncovered, 2 minutes more. Stir in
green onions.
Drain vegetables and arrange in serving dish. Spoon scallops on top;
sprinkle with sesame seeds. Serve with steamed rice, if desired.
Makes 4 servings.
Thanks to the microwave, this Asian-inspired (and low-fat) dish is
faster than Chinese takeout.
