 Homemade Meatball Mix

 4      pounds        lean ground beef
 2                    eggs -- slightly beaten
 1      cup           dry bread crumbs
 1/2  cup           onion -- finely chopped
 1      tablespoon    salt -- or to taste
 1      teaspoon      pepper
 2      cups          milk
 
 Preheat oven to 375°.  Combine all ingredients; blend well.  Shape
 mixture int 1 1/2" balls.  Place meatballs on an ungreased baking sheet.  Bake
 for 25-30 minutes, until browned.
 
 Remove meatballs from baking sheets and drain well on paper towels.  Cool
 completely.  Divide meatballs into four portions.  Place each portion in a
 1-quart freezer container, leaving 1/2" space at the top.  Seal; label with
 date and contents.  Freeze.  Use within 3 months.
 
 Makes approximately 80 meatballs.
