Pastry:
4 sticks margarine -- softened
16 ozs fat-free cream cheese -- softened
6 c unbleached flour
Filling Options:
Cream Cheese Filling:
8 ozs fat-free cream cheese -- softened
1 tbsp margarine -- softened
1/2 c granulated sugar
1 tsp lemon juice, bottled
Cottage Cheese Filling:
1 c fat-free cottage cheese -- small curd
3 tbsps granulated sugar
1/4 tsp cinnamon
Cherry Filling:
12 ozs cherry pie filling
1/8 tsp allspice
1/8 tsp rum extract
Pineapple Filling:
1 1/2 c crushed pineapple -- drained
1/2 c granulated sugar
1/3 c water
Apricot Filling:
12 ozs apricot pie filling

Preheat oven at 400. To prepare pastry, combine flour, 16 ozs cream cheese,
and 4 sticks of butter in a mixing bowl. Beat until thoroughly combined.
Cover and chill till easy to handle. On a sugared surface, roll each dough
1/8 thick and cut into 2 x 2" squares using scalloped pastry wheel. Add
about a teaspoon of filling in the center of each square. Fold opposite
corners to the center with one overlapping the other. Moisten the corners
to help them stick together. Lightly brush with water and sprinkle with
sugar. Bake 12 to 15 minutes or until lightly browned.

To prepare cream cheese filling, combine remaining cream cheese, 1
tablespoon margarine, 1/4 cup sugar, and lemon juice in a mixing bowl.

To prepare cottage cheese filling, press as much moisture as possible out
of cottage cheese. In a mixing bowl, combine cottage cheese, sugar, and
cinnamon until blended.

To prepare cherry filling, combine cherry pie filling, allspice, and rum
extract in mixing bowl.

To prepare pineapple filling, combine pineapple, 1/2 cup granulated sugar,
and 1/2 cup water in a saucepan. Bring to a boil. Reduce heat to medium and
boil gently for 25 minutes, or until thickened, stirring occasionally.
Watch closely last 5 minutes to prevent sticking.

Spread apricot pie filling in the center of each square.
