24 Vanilla wafers
16 oz Cream cheese; softened
3/4 c Sugar, granulated
2 Egg
1 T Lemon juice
1 t Vanilla extract
16 oz Cherry pie filling
Whipped cream; (opt)

Place paper liners in 24 muffin cups & a vanilla wafer in the bottom
of each. Combine cheese, sugar, eggs, lemon juice & vanilla & beat
until smooth. Pour each cup about 2/3 full. Bake @ 350°F, 15-20
mins; cool. Refrigerate overnight.

Next day, spoon pie filling on top of each cake & top with whipped
cream if desired.
