 HARD SAUCE

 8      tablespoons   unsalted butter
 3/4  cup           sugar
 4      tablespoons   brandy
 
 Beat the butter until it is pale and creamy. Gradually beat in the sugar.
 Slowly add the brandy, beating until it is well incorporated.
 
 Pack the sauce into a dish, cover tightly with transparent wrap and chill in
 the refrigerator until ready to serve.
 
 Makes about 3/4 cup.

 You could also use Confectioners' sugar icing for a drizzle over the cake.
