Kentucky Hot Brown

Amount Measure Ingredient -- Preparation Method

1 1/2 cups cheese sauce -- recipe following
1 slice toast
1 slice turkey
1 slice country ham
2 slices cooked bacon
1/4 cup sharp cheese -- grated
1/4 cup Parmesan cheese -- grated
paprika to taste

CHEESE SAUCE

2 tablespoons margarine
2 tablespoons allpurpose flour
1 cup milk
1 cup cheddar cheese -- shredded
1/4 teaspoon salt
white pepper -- to taste

Cheese sauce:

Melt margarine in saucepan, over low heat. Blend in flour, salt and
pepper. Add milk slowly, stirring constantly. Put in cheese and continue
to cook until melted.

Hot Brown:

Preheat oven to 400 degrees. Put 2 tablespoons cheese sauce on bottom of
individual baking dish. Place toast on sauce. Cover with 3 tablespoons
of sauce. Put ham on top. Cover with 3 tablespoons of sauce. Sprinkle
1/2 of parmesan cheese on this. Put turkey slice on top. Cover with 3
tablespoons sauce. Sprinkle sharp cheese on this. Add rest of Parmesan.
Garnish with paprika and bacon. Bake 15 minutes.

NOTES : A slice of tomato or a peach half may be placed on top of bacon
if desired. Claudia Sanders was Colonel Sander's (of Kentucky
Fried Chicken) wife. She had her own restaurant which still serves
family style meals.
