 1      tablespoon    olive oil
 1/2  cup           chopped onion
 4      teaspoons     grated fresh ginger
 1/2  teaspoon      cumin seeds
 4      cups          water
 1      teaspoon      salt
 2      cups          long-grain rice
 
 1.  Heat oil in large saucepan over medium-low heat; add onion, ginger and cumi
 n seeds.  Cook until onion is softened, 3 to 4 minutes.
 
 2.  Add water and salt; bring to a boil.  Stir in rice; cover, reduce heat and
 simmer 20 minutes.  Remove from heat; let stand, covered, 5 minutes.  Fluff wit
 h fork before serving.  Makes 8 servings.
 
 This rice is flavored with onions cooked with freshly grated ginger and cumin.
