Italian Parmesan Dinner Rolls

3 cups all-purpose flour -- up to /2 - 4
2 packages active dry yeast
1 teaspoon dried italian seasoning -- crushed
1 teaspoon dried parsley flakes
1 1/4 cups 1% lowfat milk
1/4 cup water
2 tablespoons butter
2 tablespoons sugar
1 teaspoon garlic salt
1 egg
3/4 cup grated parmesan cheese
2 tablespoons butter -- melted

In a large bowl combine 1 1/2 cups of the flour, yeast, Italian seasoning, and
parsley flakes. In a saucepan heat and stir the fat free milk, water, 2 tables
poons butter, sugar, and garlic salt just until warm (120ø to
130ø) and butter al
most melts. Add 1% lowfat milk mixture to flour mixture. Add egg. Beat with
an electric mixer on low to medium speed for 30 seconds, scraping the side of t
he bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, s
tir in 1/2 cup of the Parmesan cheese and as much of remaining flour as you can
.

Turn the dough out onto a lightly floured surface. Knead in enough of the rema
ining flour to make a moderately soft dough that is smooth and elastic (3 to 5
minutes total). Shape dough into a ball. Place in a lightly greased bowl, tur
ning once to grease surface of dough. Cover; let rise in a warm place until do
ubled in size (about 45 minutes).

Grease baking sheets or a 13x9x2-inch baking pan. Punch dough down. Turn doug
h out onto a lightly floured surface. Divide dough into 16 portions. Gently s
hape each portion into a ball. Place balls on prepared baking sheets or in pre
pared pan. Brush tops with 2 tablespoons melted butter and sprinkle with remai
ning Parmesan cheese. Cover and let rise in warm place until nearly doubled (a
bout 15 minutes).

Bake in a 375ø oven for 20 to 25 minutes or until golden. Serve warm.
Makes 16
rolls.
